Do you know how to safely make infused oils? Many of us have experienced dunking Italian bread in infused oils when we dined at a favorite restaurant. These infused oils can be made at home, but must be prepared using a 3% solution of citric acid and fresh herbs. Citric acid is not ascorbic acid (Vitamin C). Failure to follow directions can lead to oils contaminated by botulism. Lynn Humphreys, a TriCity Ceos member, gave the details on safe preparation, and distributed information sheets prepared by WVU extension agents Kelly Hicks and Margaret Miltenberger.

Annette Thompson hosted the meeting. Members shared covered dish foods and enjoyed a summer afternoon lunch on Annette’s patio.

Final plans were made for the CEOS summer event at the Cadle Farm on July 23, 2026. TriCity CEOS will be serving as hostesses for the meeting which will include speakers from Peyton Hospice House. Snack items will be collected for distribution to the clients and their families at the Hospice facility in Fairlea.

The August 11 TriCity CEOS meeting will be held at the Ronceverte Baptist Church. The topic is Reorganization. Anyone interested in joining one of the CEOS clubs located at various sites around Greenbrier County can contact Mary at the WVU Extension Office in Fairlea by phoning 304-647-7408.
