“Better Than the Fair” Homemade Lemonade
Makes: about 48 oz.
REGULAR:
Ingredients:
1 1/4 c. freshly squeezed lemon juice (5-7 large lemons)
1 – 2 tbsp. freshly squeezed lime juice (1 lime)
1 – 1 1/2 c. white granulated sugar
1 – 1 1/4 c. crushed ice
4 c. water
SUGAR-FREE:
Ingredients:
1 1/2 c. freshly squeezed lemon juice (7-9 lemons)
1 – 2 tbsp. freshly squeezed lime juice (1 lime)
1 1/2 – 2 c. Splenda or sugar substitute
1 c. crushed ice
4 c. water
Method:
Process all the ingredients in a blender at high speed until completely smooth (about 10-15 seconds). Refrigerate for one hour, if desired. Serve over ice and drink the same day. (After 8-10 hours, the taste of the lemonade will start to sour.)
NOTE: Adding more crushed ice and/or sugar or artificial sweetener will dilute the tartness of the citrus juices. Begin with the low end of the ingredient amount ranges, taste, and if needed, add more to achieve desired taste.
Sweet, Spicy, and Scrumptious Grilled Cheese Sandwich
Makes: 4 sandwiches
Ingredients:
• 8 slices fresh sourdough bread
• 8–12 tbsp unsalted butter, softened
• 4 slices smoked Gouda
• 4 slices pepperjack cheese
• 4 slices white American cheese
• 4 tbsp hot pepper jelly, divided (4x)
• 2 tsp honey, divided (4x)
- 4-8 slices of tomato (optional)
Method:
Preheat a large skillet over low-medium heat.
Spread softened butter generously on one side of each sourdough slice. The buttered sides will face outward.
On the unbuttered side of four slices, layer:
1 slice smoked Gouda
1 slice pepperjack
1 slice white American
1 tbsp. pepper jelly (spread evenly)
1/2 tsp. honey (drizzle lightly)
1-2 slices of tomato (optional)
Top each with a second slice of sourdough, buttered side facing out. Place in preheated skillet. Cook each sandwich 3–4 minutes per side until the bread is golden and the cheese is fully melted. Press gently with a spatula to encourage even melt.
When both sides of sandwiches are toasted to your preference, remove sandwiches from the skillet and place on a serving platter. Let each sandwich rest 1 minute before slicing.
